Pecan Pie Cookies
1 Cup Butter (2 sticks)
½ Cup Sugar
½ Cup Dark Corn Syrup
2 Egg Yolks
2 ½ Cups Flour
2 Egg Whites
*Pecan Filling:
½ Cup Sugar
¼ Cup Butter
3 Tbsp. Dark Corn Syrup
½ Cup Chopped pecans
- Cream butter and sugar.
- Add corn syrup and egg yolks.
- Beat until well blended and stir in flour
- Chill for several hours
- Roll dough into 1-inch balls and brush with egg whites.
- Bake at 375 degrees for 5 minutes.
- Roll 1/1 tsp. chilled pecan filling into ball and press into center of cookie.
- Return to oven, baked 5 minutes longer or until lightly browned.
